Can I make Bitsy Plus (no on-board RS-485) talk RS-485 using an off the shelf 232-485 convertor?
(would Bitsy Plus also need different serial drivers?)

I expect that your converter should work just fine, though it depends on the device you're using. If the converter accepts just RX, TX and GND from the Bitsy, it should be no problem.

The Bitsy Plus CE build includes the RS485 drivers we use in our other products. If you choose to use RS-485 in your final product, you can add an inexpensive RS-485 transceiver to your personality board to create a cost-effective RS-485-enabled device.

You might also take a look at the post about J1708 at topic 789. J1708 is an even simpler way to implement a multi-drop serial network, though it sacrifices some bandwidth by running only at half duplex.
